1Cook and stir vegetable in a large nonstick skilled on medium-high heat for 3 minutes. Add chicken, cook, stirring occasionally for 3 to 4 minutes until no longer pink. Stir in BBQ sauce, and cook on medium heat for 3 minutes or until chicken is done still stirring occasional.
2Spoon chicken mixture into the center of the warmed tortillas, and top with cheddar cheese. Roll up, and put into oven just long enough to melt the cheese. Cut to serve. Top with lettuce and tomato when serving
