I was looking for something different for dinner when I came across this recipe. I made it, and my family loved it.

Ingredients

  • 1 large
    green pepper julienned
  • 1 large
    red pepper julienned
  • 1 large
    onion thinly sliced
  • 1 lb
    boneless, skinless chicken breasts, cut into strips
  • 1/3 c
    bbq sauce (i used sweet baby rays)
  • 4
    flour tortillas (i used 10 inch ones) warmed
  • 1 c
    shredded chedar cheese

How to Make BBQ Cheddar Roll UP

Step-by-Step

  1. Cook and stir vegetable in a large nonstick skilled on medium-high heat for 3 minutes. Add chicken, cook, stirring occasionally for 3 to 4 minutes until no longer pink. Stir in BBQ sauce, and cook on medium heat for 3 minutes or until chicken is done still stirring occasional.
  2. Spoon chicken mixture into the center of the warmed tortillas, and top with cheddar cheese. Roll up, and put into oven just long enough to melt the cheese. Cut to serve. Top with lettuce and tomato when serving
