Ingredients For basil lemongrass curry

  • 4 stalk
    lemongrass white parts only chopped
  • 1/2 c
    fresh basil
  • 2 sm
    shallots chopped
  • 4 clove
    garlic
  • 1 Tbsp
    brown sugar
  • 1/2 tsp
    ground turmeric, coriander, cumin, and salt
  • 1 tsp
    red pepper flakes
  • 32 oz
    coconut milk
  • 4
    boneless skinless chicken cut into pieces
  • 1 c
    carrots cut into matchsticks
  • 1 c
    shredded cabbage
  • 6
    scallions chopped
  • fresh basil
  • rice for serving
  • 1
    inch piece of ginger

How To Make basil lemongrass curry

    Add the lemongrass, basil, shallots, ginger, garlic, coriander, cumin, turmeric, salt, red pepper flakes and brown sugar. Add 1 tbsp water. Process into a paste.

    Over medium heat add some oil and once the oil is hot add the paste and let cook 1 minute. Then add the coconut milk. Cook and let reduce for 15 minutes. Add the chicken pieces in and cook 5 minutes.

    Pour the curry over the rice and top with carrots, cabbage, basil, and scallions.
