Ingredients
- 4 stalks lemongrass white parts only chopped
- 1/2 cup fresh basil
- 2 small shallots chopped
- 4 cloves garlic
- 1 tablespoon brown sugar
- 1/2 teaspoon ground turmeric, coriander, cumin, and salt
- 1 teaspoon red pepper flakes
- 32 ounces coconut milk
- 4 boneless skinless chicken cut into pieces
- 1 cup carrots cut into matchsticks
- 1 cup shredded cabbage
- 6 scallions chopped
- fresh basil
- rice for serving
- 1 inch piece of ginger
How To Make basil lemongrass curry

Step 1Add the lemongrass, basil, shallots, ginger, garlic, coriander, cumin, turmeric, salt, red pepper flakes and brown sugar. Add 1 tbsp water. Process into a paste.

Step 2Over medium heat add some oil and once the oil is hot add the paste and let cook 1 minute. Then add the coconut milk. Cook and let reduce for 15 minutes. Add the chicken pieces in and cook 5 minutes.

Step 3Pour the curry over the rice and top with carrots, cabbage, basil, and scallions.
