While a little time consuming, this recipe is well worth it the first time you open the oven door and smell the rich aroma of all the combined seasonings. We like to serve this with mashed potatoes and steamed broccoli, and, of course, homemade bread.

Ingredients
- 1 - whole baking chicken or pieces (with skin), which ever you prefer
- 1 package Feta cheese
- 2 teaspoons basil (or to taste)
- 2 tablespoons lemon juice (or to taste)
- - seasonings to taste (salt, pepper, garlic, etc)
How To Make basil chicken

Step 1Mix lemon juice, basil and feta in separate bowl.

Step 2Rinse chicken and pat dry. Carefully pull skin away from chicken, without detaching it from the edges, then stuff with feta mixture.

Step 3season exterior of chicken to taste (I use lemon juice, basil, salt, pepper, and garlic)

Step 4Bake at 350° for about 45 min. for pieces, longer for whole chicken. Puncture chicken with knife. Chicken is done when juices run clear.
