1whole baking chicken or pieces (with skin), which ever you prefer
1 pkgFeta cheese
2 tspbasil (or to taste)
2 Tbsplemon juice (or to taste)
·seasonings to taste (salt, pepper, garlic, etc)
How to Make Basil Chicken
- Mix lemon juice, basil and feta in separate bowl.
- Rinse chicken and pat dry. Carefully pull skin away from chicken, without detaching it from the edges, then stuff with feta mixture.
- season exterior of chicken to taste (I use lemon juice, basil, salt, pepper, and garlic)
- Bake at 350° for about 45 min. for pieces, longer for whole chicken. Puncture chicken with knife. Chicken is done when juices run clear.
