    cider vinegar
  • 3 Tbsp
    brown sugar, firmly packed
  • 2 Tbsp
    worcestershire sauce
  • 2 Tbsp
  • 1 Tbsp
    lemon juice
  • 2 tsp
    dry mustard
  • 1 tsp
    chili powder
  • 1 tsp
  • 1/3 c
    unbleached all-purpose flour
  • 1 tsp
  • 1/4 tsp
  • 6 lb
    chicken, broiler-fryers, cut-up

How to Make Barbecued Chicken In a Bag


  1. Combine the water, ketchup, brown sugar, vinegar, worcestershire sauce, butter, lemon juice, mustard, chili powder and paprika in a 2-quart saucepan.
  2. Cook, over medium heat, until the mixture comes to a boil, then remove from the heat.
  3. Combine the flour, salt and pepper in a large oven-browning bag.
  4. Add the chicken and shake to coat well.
  5. Place in a shallow roasting pan.
  6. Open the bag and pour the sauce over the chicken.
  7. Secure the bag loosely with a twist tie and pierce the top of the bag 6 times with a sharp knife.
  8. Bake in a preheated 350 degree oven for 1 hour or until tender.
  9. TO SERVE: Remove the chicken from the bag. Pour the sauce into a bowl and ladle off the excess fat.
  10. Serve the chicken with the sauce on the side.
