barbecued brined chicken
I was looking for a way to barbecue chicken without the skin burning (I love crispy skin!). I always brine my Thanksgiving turkey so I thought, why not brine chicken? This recipe produces the moistest chicken you'll ever taste off the BBQ along with incredibly flavorful, crispy skin.

Ingredients
- 3 - 4 - bone in, skin on chicken pieces
- 1/4 cup kosher salt
- 1 - bay leaf
- 2 cloves garlic, smashed
- 3 - 4 slices fresh lemon
- 1 tablespoon black peppercorns
- 1 tablespoon coriander seeds
- 3 cups water
How To Make barbecued brined chicken

Step 1Mix together all brining ingredients (from kosher salt to water). Add chicken pieces. Brine for at least one hour, preferably overnight.

Step 2Remove chicken from brine; discard brining water. Grill chicken pieces over low heat, turning occasionally, for about one hour or until juices are no longer pink.
