balsamic meat loaf with garlicky beans

I have tried several kinds of meat loaf and I prefer this combination of meat, I find just using beef the loaf is tough., this combination is my favorite.

Ingredients
- 1/4 cup plus 2 tbsp ketchup
- 4 tablespoons balsamic vinegar
- 2 - large eggs
- 1/2 cup dry bread crumbs
- 1 pound ground chicken
- 3/4 pound ground lean pork
- 2 teaspoons olive oil, extra virgin
- 6 cloves garlic 4 finely chop and 2 thinly sliced
- 1 dash fresh flat leaf parsley finely chopped
- 2 tablespoons olive oil
- 1/4 teaspoon crushed red pepper flakes
- 1 can {15.5 oz. red or white kidney beans
- 1 bunch baby spinach rough chop about 2 cups
How To Make balsamic meat loaf with garlicky beans

Step 1Heat oven to 375F lined a rimmed baking sheet with foil.. in a small bowl whisk together 1/4 cup ketchup and 2 tbsp vinegar and set aside.

Step 2In large bowl whisk together the eggs remaining 2 tbsp ketchup and vinegar , s and p to taste..mix in the bread crumbs, add the parsley and chopped garlic and add the chicken and pork and mix to incorporate.

Step 3Shape meat mixture into 2 loaves and place on prepared baking sheet..bake for 20 to 25 minutes, brush with ketchup-vinegar mix and bake an additional 10 to 15 minutes.or internal temperature is 150F.

Step 4While the meat loaves are baking for the last time , heat the oil in large skillet over medium heat add the sliced garlic, stirring until light golden add the beans and 1/4 cup water and cook until heated through about 3 minutes, add the spinach and cooking tossing until it begins to wilt..serve the beand with the meat loaf baked or mashed potatoes go great with this meal.
