balsamic grilled chicken salad

Found this recipe in a American Profile insert in our newspaper. It was a big hit at a party my sister had. I'm not generally a fan of mayonaise based salads but, this has to be my new favorite. Great flavor and definitely tastes better made a day before. Just add a little more mayo before serving if you feel it's a little dry. I think the dried cherries and chives really make this dish. I'll be making this for the adults at my son's birthday party. Since it will be outside and I won't have access to electricity I thought this would be great. I'm just going to make sandwiches on kieser rolls and set them in a cooler for people to help themselves. I hope you like this as much as I do. Enjoy!

Ingredients

  • MARINADE FOR CHICKEN
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1 teaspoon italian seasoning
  • 1 1/2 pounds chicken breasts, boneless and skinless
  • SALAD WITH DRESSING
  • 1 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/2 cup dried cherries
  • 1/2 cup light mayo
  • 1 tablespoon creole mustard (i used dijon mustard)
  • 1 tablespoon chives, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

How To Make balsamic grilled chicken salad

  • Step 1
    Mix all ingredients for marinade and combine with chicken. Marinate for at least 1 hour.
  • Step 2
    Grill chicken and chop into bite size pieces.
  • Step 3
    Combine ingredients for salad and dressing. Pour over grilled chopped chicken and mix well. Serve on kieser rolls.
  • Step 4
    Can be made a day ahead. Before serving if it seems a little dry add a bit more mayo.
