baked potato chicken casserole

I found a similar recipe from Gabby Varricchio (http://www.justapinch.com/me/gabbyvarricchio/recipes) and I modified it a little because I didn't need such a big recipe. I don't want to forget what I did so I'm going to post it on here!

Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • 5 medium red potatoes
  • 3 tablespoons buffalo sauce
  • 3 tablespoons olive oil
  • 2 tablespoons garlic powder
  • 1 tablespoon pepper
  • 1 teaspoon salt
  • 1 cup bacon crumbles
  • 1 bag shredded cheese (suggested: colby jack)

How To Make baked potato chicken casserole

  • Step 1
    Preheat the oven to 350° and grease your dish. ( I used a 9x9 metal pan.)
  • Step 2
    Cube chicken and potatoes and place in a large mixing bowl. (approx. 1 inch squares)
  • Step 3
    In a seperate bowl mix together the buffalo sauce, olive oil, garlic powder, pepper and salt.
  • Step 4
    Pour the mixture over top of the chicken and potatoes and make sure it coats each piece. (I used my hands but a slotted spoon or spatula would work just fine.)
  • Step 5
    Put in the whole mixture into the greased dish and place into the oven for 25 minutes.
  • Step 6
    Take out the dish and stir. Place back into the oven for an additional 25 minutes.
  • Step 7
    Take out the dish and stir. Cover the dish with as much cheese as desired and then sprinkle bacon on top.
  • Step 8
    Put the dish back in the oven for a final 20 minutes.
