Sometimes it is difficult to keep chicken from drying out too much when baking... Well, no need to worry about that with this Dijon chicken! Breaded chicken gets a facelift in this easy recipe. The milk and Dijon mustard combination adds flavor and helps to seal in the moisture. When baked, the chicken is tender and the Parmesan bread crumb crust is crunchy. Serve with wild rice, mashed potatoes, or your favorite roasted veggie for an easy weeknight dinner.
