baked chicken with orzo

Ingredients

  • 1 - chicken, quartered broiler-fryer
  • 1 tablespoon butter
  • 1.75 cups orzo pasta
  • 1.5 teaspoons salt
  • 1/2 teaspoon oil
  • 1 cup chicken broth
  • 6 ounces tomato paste
  • 1/4 teaspoon pepper
  • - plain yogurt
  • 1/3 cup water

How To Make baked chicken with orzo

  • Step 1
    Place the chicken in a shallow roasting pan, skin side up. Add 1/3 cup water.
  • Step 2
    Dot with butter. Salt and pepper to taste.
  • Step 3
    Bake in 350 oven 1 hour.
  • Step 4
    Fifteen minutes before chicken is done, bring 2 quarts of water to boil, stir in orzo, 1/2 teaspoon salt and oil.
  • Step 5
    Parboil 5 minutes. Drain orzo in colander.
  • Step 6
    Rinse in cold water.
  • Step 7
    Drain.
  • Step 8
    Remove baked chicken from oven. Place in dish.
  • Step 9
    Cover tightly with heavy-duty foil.
  • Step 10
    Set aside.
  • Step 11
    Turn oven to 425. Add 1 cup water and broth to roasting pan.
  • Step 12
    Stir to loosen drippings.
  • Step 13
    Add tomato paste, 1 teaspoon salt, pepper and drained orzo.
  • Step 14
    Bake 30 minutes or until orzo has absorbed liquid and is tender. Adjust salt.
  • Step 15
    Sprinkle orzo with parmesan cheese or dollops of yogurt. Serve with baked chicken.
