Ingredients
- 1 - chicken, quartered broiler-fryer
- 1 tablespoon butter
- 1.75 cups orzo pasta
- 1.5 teaspoons salt
- 1/2 teaspoon oil
- 1 cup chicken broth
- 6 ounces tomato paste
- 1/4 teaspoon pepper
- - plain yogurt
- 1/3 cup water
How To Make baked chicken with orzo

Step 1Place the chicken in a shallow roasting pan, skin side up. Add 1/3 cup water.

Step 2Dot with butter. Salt and pepper to taste.

Step 3Bake in 350 oven 1 hour.

Step 4Fifteen minutes before chicken is done, bring 2 quarts of water to boil, stir in orzo, 1/2 teaspoon salt and oil.

Step 5Parboil 5 minutes. Drain orzo in colander.

Step 6Rinse in cold water.

Step 7Drain.

Step 8Remove baked chicken from oven. Place in dish.

Step 9Cover tightly with heavy-duty foil.

Step 10Set aside.

Step 11Turn oven to 425. Add 1 cup water and broth to roasting pan.

Step 12Stir to loosen drippings.

Step 13Add tomato paste, 1 teaspoon salt, pepper and drained orzo.

Step 14Bake 30 minutes or until orzo has absorbed liquid and is tender. Adjust salt.

Step 15Sprinkle orzo with parmesan cheese or dollops of yogurt. Serve with baked chicken.
