Ingredients

  • 2 cups chicken, cooked and chopped
  • 1/2 cup mayonnaise
  • 1.5 cups celery, diced
  • 1 slice lemon, peeled
  • 1/2 cup almonds, blanched
  • 1/2 small onion
  • 4 cups potato chips, whole
  • 1 cup cheddar cheese, cubed

How To Make baked chicken salad

  • Step 1
    Heat oven to 375.
  • Step 2
    Grease a 2-quart casserole.
  • Step 3
    Put chicken and celery into casserole.
  • Step 4
    Blender - chop nuts and add to chicken.
  • Step 5
    Put 2 cups of potato chips into blender container, cover and process 4 cycles at (stir).
  • Step 6
    Empty onto wax paper and set aside.
  • Step 7
    Repeat with remaining chips.
  • Step 8
    Put remaining ingredients into container, cover and process at (blend) until smooth.
  • Step 9
    Add to chicken and mix well.
  • Step 10
    Sprinkle potato chip crumbs over top and bake for 30 minutes.
  • Step 11
    NOTE: A cycle is defined as a 1 second pulse operation with a pause for food to settle before repeating.
