This is a very simple recipe to assemble and bake, and will give you a tasty dinner in under an hour.

I’ve seen this recipe using various types of sweeteners (agave, maple syrup), and mustards (yellow, stone ground); however, good clover honey and creamy Dijon mustard are my favorites.

I did add some tamari to the recipe, but don’t let that throw you… It adds a bit more depth to the sauce.

So, you ready… Let’s get into the kitchen.

Ingredients

  • THE CHICKEN

  • 2 large
    chicken breasts, boneless/skinless
  • ·
    salt, kosher variety, to taste
  • ·
    black pepper, freshly ground, to taste
  • THE SAUCE

  • 1/2 c
    fresh clover honey
  • 1/2 c
    plain dijon mustard (i prefer grey poupon)
  • 2 Tbsp
    tamari sauce
  • 1 Tbsp
    olive oil, extra virgin
  • 1 Tbsp
    bourbon (optional)
  • 1 tsp
    dried basil
  • 1 tsp
    dried parsley

How to Make Baked Chicken in a Dreamy Honey/Dijon Sauce

Step-by-Step

  1. PREP/PREPARE
  2. THE CHICKEN
  3. Gather your ingredients.
  4. Chef’s Note: If you have the time, I strongly recommend that you brine the chicken breasts. My standard brining solution is 1/4 cup of kosher salt dissolved in 1 quart of water. Combine the salt and water in a small bowl and stir it until the salt is dissolved. Add the chicken breasts, and refrigerate for 1 hour… no longer. Remove from the brine, rinse off, and you’re ready to go.
  5. Place a rack in the middle position, and preheat the oven to 350f (175c).
  6. Sprinkle the chicken breasts with a bit of salt and pepper, and then place in a small baking dish, or ovenproof pan.
  7. Chef’s Tip: If you brined the chicken, go easy on the salt.
  8. THE SAUCE
  9. Gather your ingredients.
  10. Add all the ingredients to a bowl.
  11. Whisk until fully mixed.
  12. Pour over the chicken.
  13. Cover the dish, or pan and place into the preheated oven for 30 minutes.
  14. After 30 minutes, remove the cover, turn the chicken over, and continue to bake until the juices from chicken run clear, about 8 – 10 additional minutes.
  15. PLATE/PRESENT
  16. I like to serve these with some steamed broccoli, and I make sure to spoon some of that yummy sauce over everything. Enjoy
