Baked Chicken in a Dreamy Honey/Dijon Sauce

I’ve seen this recipe using various types of sweeteners (agave, maple syrup), and mustards (yellow, stone ground); however, good clover honey and creamy Dijon mustard are my favorites.
I did add some tamari to the recipe, but don’t let that throw you… It adds a bit more depth to the sauce.
So, you ready… Let’s get into the kitchen.
Ingredients

THE CHICKEN

2 largechicken breasts, boneless/skinless

·salt, kosher variety, to taste

·black pepper, freshly ground, to taste

THE SAUCE

1/2 cfresh clover honey
-
1/2 cplain dijon mustard (i prefer grey poupon)

2 Tbsptamari sauce
-
1 Tbspolive oil, extra virgin
-
1 Tbspbourbon (optional)

1 tspdried basil
-
1 tspdried parsley
How to Make Baked Chicken in a Dreamy Honey/Dijon Sauce
- Chef’s Note: If you have the time, I strongly recommend that you brine the chicken breasts. My standard brining solution is 1/4 cup of kosher salt dissolved in 1 quart of water. Combine the salt and water in a small bowl and stir it until the salt is dissolved. Add the chicken breasts, and refrigerate for 1 hour… no longer. Remove from the brine, rinse off, and you’re ready to go.
