1 Tbspbutter

1 lgonion, chopped

2 lgcelery stalks, chopped

1 lgcarrot, chopped

1/4 cfresh flat-leaf parsley, chopped

1 clovegarlic, minced

3/4 clow fat chicken broth

1/2 tspdried thyme
-
1/8 tspfreshly ground black pepper

2 1/2 cherb-seasoned stuffing mix
- CHICKEN

6boneless chicken thighs, breast or bone-in chicken thighs

1 tspbutter
-
1/4 tspkosher salt
-
1/4 tspdried basil
-
1/4 tspdried thyme
-
1/8 tspblack pepper
How To Make baked chicken & herb-seasoned stuffing

1Stuffing - melt the butter in a large non-stick skillet over medium heat. Saute the onion, celery, carrots until onions are translucent and celery/carrots are slightly tender. Add in the parsley, garlic and 1/4 cup broth.

2Continue cooking until onions and veggies are tender and add thyme and pepper. Remove from heat. Add in the stuffing mix and remainder of the chicken broth. Transfer to a prepared 13 x 9 baking dish.

3Arrange the chicken on top of the stuffing mix. Brush the chicken with butter and sprinkle with salt, basil, thyme and pepper.

4Bake chicken/stuffing at 350 degrees for 25-30 minutes or until chicken is cooked through.
