Ingredients
- STUFFING
- 1 tablespoon butter
- 1 large onion, chopped
- 2 large celery stalks, chopped
- 1 large carrot, chopped
- 1/4 cup fresh flat-leaf parsley, chopped
- 1 clove garlic, minced
- 3/4 cup low fat chicken broth
- 1/2 teaspoon dried thyme
- 1/8 teaspoon freshly ground black pepper
- 2 1/2 cups herb-seasoned stuffing mix
- CHICKEN
- 6 boneless chicken thighs, breast or bone-in chicken thighs
- 1 teaspoon butter
- 1/4 teaspoon kosher salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/8 teaspoon black pepper
How To Make baked chicken & herb-seasoned stuffing

Step 1Stuffing - melt the butter in a large non-stick skillet over medium heat. Saute the onion, celery, carrots until onions are translucent and celery/carrots are slightly tender. Add in the parsley, garlic and 1/4 cup broth.

Step 2Continue cooking until onions and veggies are tender and add thyme and pepper. Remove from heat. Add in the stuffing mix and remainder of the chicken broth. Transfer to a prepared 13 x 9 baking dish.

Step 3Arrange the chicken on top of the stuffing mix. Brush the chicken with butter and sprinkle with salt, basil, thyme and pepper.

Step 4Bake chicken/stuffing at 350 degrees for 25-30 minutes or until chicken is cooked through.
