  • STUFFING
  • 1 Tbsp
    butter
  • 1 lg
    onion, chopped
  • 2 lg
    celery stalks, chopped
  • 1 lg
    carrot, chopped
  • 1/4 c
    fresh flat-leaf parsley, chopped
  • 1 clove
    garlic, minced
  • 3/4 c
    low fat chicken broth
  • 1/2 tsp
    dried thyme
  • 1/8 tsp
    freshly ground black pepper
  • 2 1/2 c
    herb-seasoned stuffing mix
  • CHICKEN
  • 6
    boneless chicken thighs, breast or bone-in chicken thighs
  • 1 tsp
    butter
  • 1/4 tsp
    kosher salt
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    dried thyme
  • 1/8 tsp
    black pepper

How To Make baked chicken & herb-seasoned stuffing

    Stuffing - melt the butter in a large non-stick skillet over medium heat. Saute the onion, celery, carrots until onions are translucent and celery/carrots are slightly tender. Add in the parsley, garlic and 1/4 cup broth.

    Continue cooking until onions and veggies are tender and add thyme and pepper. Remove from heat. Add in the stuffing mix and remainder of the chicken broth. Transfer to a prepared 13 x 9 baking dish.

    Arrange the chicken on top of the stuffing mix. Brush the chicken with butter and sprinkle with salt, basil, thyme and pepper.

    Bake chicken/stuffing at 350 degrees for 25-30 minutes or until chicken is cooked through.
