Ingredients

  • 3-3 1/2 pounds broiler-fryer, cut up
  • 1 can sliced mushrooms, undrained (4 oz)
  • 1 cup burgundy or other dry red wine
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried whole oregano
  • - hot cooked rice

How To Make baked chicken "coq au vin"

  • Step 1
    Place the cut-up chicken in a 13 x 9 x 2 inch baking dish
  • Step 2
    Drain mushrooms, reserving liquid. Add enough water to the liquid to equal 1/4 cup. Combine mushrooms, liquid, wine, and next 7 ingredients in a jar. Cover tightly and shake vigorously Pour the mushroom mixture over the chicken.
  • Step 3
    Bake, uncovered, at 375 degrees for 1 hour or until the chicken is done. Serve with rice.
