3-3 1/2 lb
broiler-fryer, cut up
1 can(s)
sliced mushrooms, undrained (4 oz)
1 c
burgundy or other dry red wine
1/4 c
soy sauce
1 Tbsp
brown sugar
1 Tbsp
olive oil
1 tsp
ground ginger
1/4 tsp
garlic powder
1/4 tsp
onion powder
1/4 tsp
dried whole oregano
hot cooked rice

How to Make Baked Chicken "Coq au Vin"


  • 1Place the cut-up chicken in a 13 x 9 x 2 inch baking dish
  • 2Drain mushrooms, reserving liquid. Add enough water to the liquid to equal 1/4 cup. Combine mushrooms, liquid, wine, and next 7 ingredients in a jar. Cover tightly and shake vigorously Pour the mushroom mixture over the chicken.
  • 3Bake, uncovered, at 375 degrees for 1 hour or until the chicken is done. Serve with rice.
