Just an easy way to bake chicken that is simple, moist and full of flavor.

My mother always made her chicken this way.

cut up chicken
carrots peeled
salt and pepper
seasonings of choice, optional


1Peel the carrot and leave whole. Clean the celery. In a large roaster lay the carrots and celery stalks. Have enough to cover the bottom of the pan.
2Clean the chicken and lay it on top of the celery and carrots. Salt & pepper or season with your choice of seasoning.
3Cover the chicken. Place in oven at 325 degrees. Bake the chicken slowly until done. Depending on the roaster or roasting pan the chicken should brown. If not uncover the chicken for the last 45 minutes and brown it.
4Serve carrots as your vegetable.
