Ingredients

  • 2 - boneless skinless chicken breasts
  • 4 - eggs, beaten
  • 1/2 teaspoon salt
  • 1 cup fine bread crumbs
  • 8 tablespoons butter
  • 1/2 pound fresh mushrooms, sliced
  • 4 ounces gruyere cheese, shredded
  • 1 cup chicken stock
  • 1 - lemon, juiced

How To Make baked chicken breasts with gruyere & mushrooms

  • Step 1
    Cut boned breasts into strips.
  • Step 2
    Marinate in egg and salt mixture for 1 hour.
  • Step 3
    Roll chicken in bread crumbs to coat.
  • Step 4
    Brown lightly in butter in small pan.
  • Step 5
    Transfer to 1 1/2 quart casserole.
  • Step 6
    Slice mushrooms over chicken.
  • Step 7
    Sprinkle cheese over mushrooms.
  • Step 8
    Pour chicken stock over all.
  • Step 9
    Bake in 350 degree oven for 30 minutes or until heated through.
  • Step 10
    Pour fresh lemon juice over casserole just before serving.
