Here's another recipe from the same Amish cookbook that the carrot cake came from. 'Baked Chicken Barbecue...one of my favorite dishes! This also makes a great barbecue sauce on its own. *Variation: Omit onion. Add 1/2 tsp. paprika and 1/4 tsp. hickory smoke seasoning to sauce.

Ingredients

  • 2 3 pounds whole chickens
  • 1 cup ketchup
  • 1/4 cup water
  • 1/4 cup vinegar
  • 1/4 cup butter
  • 3 tablespoons brown sugar
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoons salt
  • - juice of 1/4 lemon
  • 1 - onion, diced* (see my notes)

How To Make baked chicken barbecue

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    In a saucepan combine all ingredients except chicken; bring to a boil and simmer for 10 minutes.
  • Step 3
    Spoon sauce over chickens in a 9- X 13-inch baking dish; add 1/3 cup of water.
  • Step 4
    Bake, uncovered, in the preheated oven for 2 hours, basting occasionally.
