Ingredients For baked chicken and olives, mom's

  • 2 1/2 lb
    chicken
  • 1 c
    flour
  • 1 Tbsp
    salt
  • 1 Tbsp
    paprika
  • 1/2 tsp
    pepper
  • 1/2 c
    butter
  • 7 oz
    pitted black olives
  • 1 c
    orange juice
  • 1 Tbsp
    brown sugar
  • 1 tsp
    salt
  • 12/ tsp
    thyme
  • 1
    onion, sliced into rings
  • 1 tsp
    paprika
  • cooked rice

How To Make baked chicken and olives, mom's

    Combine flour, salt, paprika and pepper in a bag. Cut up chicken and coat with mixture. Brown in 1/2 c butter. Place in large flat casserole. In saucepan combine a second 1/2 c butter and all but paprika. Simmer 4 min, pour over chicken. Sprinkle with paprika. Bake 1 1/2-1 3/4 hours at 375 degrees or until fork tender. Add more orange juice if too dry, baste 4-5 times during baking. Serve with rice.
