I love this recipe! Decided to use what I had at the house today, because I am snowed in! A very hearty comfort food! Its also very versatile! you can use penne and different cheeses. or turkey instead of chicken!

Ingredients

  • 1 large chicken breasts, boneless and skinless, cubed
  • 1/2 medium yellow onion, diced
  • 1/4 large green bell pepper, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon italian seasoning
  • 1 jar favorite marinara sauce
  • 2 cups cheddar or mozzarella shredded cheese
  • 2 cups elbow macaroni, cooked until almost done
  • - salt and pepper to taste

How To Make baked carolina

  • Step 1
    First I cooked the macaroni, until it was 2/3 of the way done. Drained and put back into pot.
  • Step 2
    Then I cooked cooked the chicken pieces, onion, green bell pepper, and garlic in oil and a small skillet. Seasoned with Italian seasonings and salt and pepper.
  • Step 3
    Once the chicken is cooked thoroughly, pour the chicken and vegetables into the macaroni pot. Stir in marinara and 1 cup of cheese. Once blended, pour into greased 9x12 casserole dish. Top with cheese and bake at 350° for 10-15 minutes or until cheese is melted.
