1 capricot preserves
1/4 clemon juice
4 Tbspsoy sauce
2 cdry bread crumb
1/44 cbutter, melted
4boneless, skinless chicken breasts
How to Make Baked Apricot Chicken
- Heat oven to 350 F. In a shallow dish, combine preserves, lemon juice and soy sauce. Mix well. Separate a small amount of sauce to coat chicken, roll in bread crumbs. Reserve remaining sauce mixture. Note that you separate the sauce so that all the sauce is not touching raw chicken (important if you are preparing the dish early).
- In a greased 13 x 9" baking dish, arrange chicken; drizzle with butter. Bake for 1 hour or until tender.
- In a small saucepan, heat the remaining preserves mixture and serve it with the cooked chicken.
