baked apricot chicken
I have been making this for years. My family loves it and it's so easy to make. Note the apricot preserves can be substituted for peach or other preserves.

Ingredients
- 1 cup apricot preserves
- 1/4 cup lemon juice
- 4 tablespoons soy sauce
- 2 cups dry bread crumb
- 1/44 cup butter, melted
- 4 - boneless, skinless chicken breasts
How To Make baked apricot chicken

Step 1Heat oven to 350 F. In a shallow dish, combine preserves, lemon juice and soy sauce. Mix well. Separate a small amount of sauce to coat chicken, roll in bread crumbs. Reserve remaining sauce mixture. Note that you separate the sauce so that all the sauce is not touching raw chicken (important if you are preparing the dish early).

Step 2In a greased 13 x 9" baking dish, arrange chicken; drizzle with butter. Bake for 1 hour or until tender.

Step 3In a small saucepan, heat the remaining preserves mixture and serve it with the cooked chicken.
