bacon wrapped chicken with colby mustard sauce
I made this tonight for dinner, Its so delicious. I came up with this recipe when I seen the last few Chicken breasts in the Freezer. I really wanted something different, So when I seen the Bacon, I said why not lol. It's very filling, and this Sauce is to die for! I cant imagine what else you could put this on! I'm thinking French Fries Lol! :)

Ingredients
- 3 - chicken breasts
- 6 - bacon strips
- 1 1/2 cups panko bread crumbs
- 3 - eggs
- 1 cup ap flour
- 1/2 cup vegetable/canola oil
- COLBY - MUSTARD SAUCE
- 1 1/2 cups colby jack cheese
- 3 1/2 tablespoons brown deli mustard
- 2 tablespoons flour
- 2 tablespoons butter
- 2 cups milk
- TT - s&p
- dash worcestershire sauce
How To Make bacon wrapped chicken with colby mustard sauce

Step 1Set up your typical breading station, and dredge each breast as follows. Flour, Egg, Panko. Once all are coated. Refrigerate for 30 mins to allow coating to adhere.

Step 2Microwave Bacon for 4-5 minutes on High until semi cooked and pliable, Put in the freezer till cool to the touch

Step 3Bring 1/2 cup oil up to heat in a large skillet with high sides. Once hot, Place chicken, and brown all sides. Once done, place aside to cool slightly on paper towels.

Step 4Wrap each Chicken breast with 2 strips of the bacon

Step 5Cook at 425 for 10-14 minutes or until an internal temp of 165 is achieved

Step 6While cooking the Chicken, Make the sauce. Melt 2T of butter in a small pot and add flour once melted

Step 7cook the roux for 3-5 minutes or until it smells like cooked pie crust

Step 8add the Milk and allow to come to a boil.

Step 9Once thickened, TURN OFF THE HEAT. And add cheese slowly until incorporated, whisking constantly.

Step 10Once incorporated, Add Worcester sauce and Mustard and bring back up to temperature, and enjoy over your Chicken! :)
