bacon and feta stuffed chicken breasts
My daughter, Janice, gave me this recipe. I love Feta cheese, so I knew that this recipe would be a keeper for me. I would also add some chopped, squeezed spinach for something different.

Ingredients
- 2 pounds chicken breast flattened
- - salt and pepper, to taste
- - garlic powder, to taste
- 1 tablespoon Feta cheese per breast
- 4 slices bacon, fried and broken into small pieces
- 2 tablespoons olive oil
- 1 can diced tomatoes (14.5 oz)
- 2 tablespoons chopped basil
How To Make bacon and feta stuffed chicken breasts

Step 1On each flattened chicken breast, sprinkle garlic powder, salt, and pepper to taste.

Step 2Put on the Feta cheese.

Step 3Then top each chicken breast with 1 tsp of the chopped bacon.

Step 4Roll up and insert a toothpick.

Step 5Brown for about 5 minutes on medium heat in a frying pan with olive oil.

Step 6In the same pan, add 1 can of chopped tomatoes with the juice to surround the chicken. Sprinkle basil over the breasts.

Step 7Cover and cook for 10 minutes or until done. Remove the toothpicks when serving.
