My daughter, Janice, gave me this recipe. I love Feta cheese, so I knew that this recipe would be a keeper for me. I would also add some chopped, squeezed spinach for something different.

Stuffing chicken breasts is an easy and delicious way to elevate a chicken dinner. These bacon and Feta stuffed chicken breasts are a recipe your entire family will enjoy. It's a touch smoky from the bacon, salty and tangy from the Feta cheese, and slightly sweet from chopped fresh basil. We really enjoyed the crispy pieces of bacon with the juicy chicken breasts.

Ingredients

  • 2 pounds chicken breast flattened
  • - salt and pepper, to taste
  • - garlic powder, to taste
  • 1 tablespoon Feta cheese per breast
  • 4 slices bacon, fried and broken into small pieces
  • 2 tablespoons olive oil
  • 1 can diced tomatoes (14.5 oz)
  • 2 tablespoons chopped basil

  • On each flattened chicken breast, sprinkle garlic powder, salt, and pepper to taste.
