My aunt Shirley taught me how to make this and it's easy. Baked chicken w/ its own gravy!

Ingredients

  • 1/2 cup canola oil
  • 8 large pieces chicken, legs, bone-in breast halves, etc.
  • 1/2 cup flour
  • 4 - celery stalks, thinly sliced
  • 3 medium green bell peppers, cut into strips
  • 2 - onions, diced
  • 3 cups lower-sodium chicken broth
  • 1-1/2 teaspoon salt
  • 1/2 teaspoon hot pepper sauce

How To Make auntie's southern chicken & gravy

  • Step 1
    Heat oven to 350. Lightly spray 2- 9" x 13" pans w/ cooking spray. In lg skillet, heat oil over med-high heat. Cook chicken, a few pieces at a time until browned on all sides. Remove chicken to pans, dividing evenly in pans.
  • Step 2
    Add flour to skillet and cook over medium for 30 seconds, or until golden, stirring constantly. Add celery, green peppers and onions. Cook until veggies are tender, about 5 mins, stirring often.
  • Step 3
    Stir in broth, salt and hot pepper sauce. Bring to a boil. Pour sauce evenly over chicken in both pans. Bake, uncovered about 1 hr, or until chicken is no longer pink inside, basting occasionally w/ gravy.
