This has always been one of my favorite family recipes. This one comes from my dad's aunt and always reminds us of her when it's made.

Ingredients

  • 10
    fajita-size flour tortillas
  • 2 c
    chopped, cooked chicken
  • 1
    onion, chopped
  • 1
    green pepper, chopped
  • 2 c
    cheddar cheese, shredded
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    cream of mushroom soup
  • 1/2 tsp
    chili powder
  • 1 can(s)
    diced rotel tomatoes
  • 1/2 tsp
    garlic salt

How to Make Aunt Dema's King Ranch Chicken

Step-by-Step

  1. Preheat oven to 350 degrees F.
    Line a 13" x 9" baking dish with tortillas, overlapping as necessary.
  2. Layer chicken, onion, bell pepper, cheese, soups, and Rotel tomatoes in order given.
  3. Sprinkle chili powder and garlic salt over the top.
    Bake for 45-50 minutes in preheated oven.
    Let rest for about 10 minutes before serving.
