assorted mini stuffed chicken breasts

I made these with different tastes in mind, sooo delightful, I might say, of course you can stuff with your favorite cheese and cold cuts.

Ingredients

  • 3 - chicken breasts, boneless and skinless
  • 1 cup mozzarella cheese, shredded
  • 1 cup feta cheese,cumbled
  • 1 cup blue cheese, crumbled
  • 1/2 cup bacon bits
  • 3 - slices ham, cut in 4 pieces
  • 1/2 cup black olives, sliced
  • 1/2 - sun dried tomatoes
  • 1 cup flour
  • 2 - eggs, beaten
  • 2 cups seasoned bread crumbs
  • - salt/pepper to taste
  • 1/2 stick butter, melted

How To Make assorted mini stuffed chicken breasts

  • Step 1
    slice the chicken breasts, pound thin in between plastic wrap..then cut into 4 pieces..repeat, each breast makes 4..so use as many breast as you need.
  • Step 2
    get all you ingredients in an assembly line...blue cheese& bacon bits, ham & mozzarella, feta, olives, sun dried tomatoes...lightly coat each chicken breast with melted butter, salt & pepper...top each piece with the assorted combos...gently roll and hold together with 2 toothpicks each.
  • Step 3
    lightly oil a baking sheet, now take each mini stuffed roll and light dust with flour, then in the beaten eggs, then in the seasoned bread crumbs... place on sheet and brush the tops with the remaining melted butter...cook at 350 degrees, till golden brown and cook through....Enjoy...I drizzle with chicken gravy or Hollandaise sauce...
