Yummy. I like to use sweet soy sauce instead of sweet chili sauce sometimes.

Ingredients

  • 1 pound boneless skinless chicken thighs cut into pieces
  • 3 tablespoons fish sauce
  • 4 cloves garlic
  • 1 - inch ginger peeled
  • 3 small shallots
  • 1/2 cup cilantro chopped
  • 2 teaspoons cornstarch
  • 1 - head boston lettuce leaves separated
  • 1 small red onion diced
  • 1 small seedless cucumber peeled and sliced
  • - asian sweet chili sauce

How To Make asian chicken meatballs lettuce wraps

  • Step 1
    Place the chicken, garlic, ginger, shallots and 1/4 cup of the cilantro in a food processor and process until mix well. Add the fish sauce and the cornstarch.
  • Step 2
    Place parchment paper on baking sheet and preheat oven 400 degrees.
  • Step 3
    Moisten hands and roll into meatballs and place on baking sheet. Bake about 15 to 20 minutes until browned and cooked through.
  • Step 4
    Place 3 meatballs on lettuce leaf and garnish with red onion, cucumber, and cilantro and drizzle sweet chili sauce.
