Ingredients
- 1 pound boneless skinless chicken thighs cut into pieces
- 3 tablespoons fish sauce
- 4 cloves garlic
- 1 - inch ginger peeled
- 3 small shallots
- 1/2 cup cilantro chopped
- 2 teaspoons cornstarch
- 1 - head boston lettuce leaves separated
- 1 small red onion diced
- 1 small seedless cucumber peeled and sliced

How To Make asian chicken meatballs lettuce wraps

Step 1Place the chicken, garlic, ginger, shallots and 1/4 cup of the cilantro in a food processor and process until mix well. Add the fish sauce and the cornstarch.

Step 2Place parchment paper on baking sheet and preheat oven 400 degrees.

Step 3Moisten hands and roll into meatballs and place on baking sheet. Bake about 15 to 20 minutes until browned and cooked through.

Step 4Place 3 meatballs on lettuce leaf and garnish with red onion, cucumber, and cilantro and drizzle sweet chili sauce.
