This is from a recipe book titled 1001 Recipes Short, Easy, Inexpensive. I picked it up at a thrift store one day last year. I am in search of new recipes to put in the dinner rotation. I have decided that I am going to work through this book this year.

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1 jar marinated artichoke hearts, drained (6.5 oz)
  • 4 slices slices Swiss cheese

How To Make artichoke chicken

  • Step 1
    Preheat oven to 325 degrees F. Between 2 pieces of wax paper, flatten the chicken to a uniform thickness.
  • Step 2
    Brown chicken breasts on both sides in a sprayed skillet and arrange chicken in a single layer in a sprayed 9 x 13-inch pan.
  • Step 3
    Coarsely chop artichoke hearts and spread over chicken with a little salt and pepper. Cover and bake 30 to 35 minutes.
  • Step 4
    Remove from the oven and lay Swiss cheese over each breast and bake for an additional 5 minutes.
