This is from a recipe book titled 1001 Recipes Short, Easy, Inexpensive. I picked it up at a thrift store one day last year. I am in search of new recipes to put in the dinner rotation. I have decided that I am going to work through this book this year.

Ingredients
- 4 boneless, skinless chicken breast halves
- 1 jar marinated artichoke hearts, drained (6.5 oz)
- 4 slices slices Swiss cheese
How To Make artichoke chicken

Step 1Preheat oven to 325 degrees F. Between 2 pieces of wax paper, flatten the chicken to a uniform thickness.

Step 2Brown chicken breasts on both sides in a sprayed skillet and arrange chicken in a single layer in a sprayed 9 x 13-inch pan.

Step 3Coarsely chop artichoke hearts and spread over chicken with a little salt and pepper. Cover and bake 30 to 35 minutes.

Step 4Remove from the oven and lay Swiss cheese over each breast and bake for an additional 5 minutes.
