I'm always looking for a new way of preparing chicken. I found this in a Taste of Home cookbook and has become a favorite.

Ingredients

  • 8 - chicken breasts, boneless and skinless
  • 2 tablespoons butter
  • 2 jars 6oz each marinated artichoke hearts,drained
  • 1/2 cup chopped onion
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1 1/4 teaspoons pepper
  • 2 cups chicken broth
  • 1 jar (4 oz) mushrooms,drained
  • - hot cooked noodles

How To Make artichoke chicken

  • Step 1
    In skillet brown chicken in butter.Do not drain the pan juices. Remove and arrange in 13by9 in baking pan. Cut artichokes into quarters and place on chicken. Place mushrooms on top of artichokes.Set aside.
  • Step 2
    Saute onion in pan juices. Blend in flour,salt and pepper. Add chicken broth and cook until thickened.Remove from heat and spoon over chicken.
  • Step 3
    Cover and bake at 350 degrees for 50-60 minutes or until chicken is tender. Put noodles on platter and top with chicken and sauce. This is also good over rice.
