arroz con pollo (chicken and rice) my way
This is one of my go-to dishes that I like to order from a favorite Mexican restaraunt near me. This is my version of that dish using ingredients that I had in my pantry and freezer. This version is made using an electric pressure cooker, similar to the Insta Pot brand.There are a wide variety of ways, and ingredients, used to make this dish but I wanted to recreate the version I am used to eating. I believe this recipe is as close as it gets. This dish packs a lot of flavor and is quick and easy for a week night meal. Try this one out, I think you'll agree. Enjoy.

Ingredients
- FOR THE CHICKEN
- 1 to 1 1/2 pounds chicken breast halves
- 2 packages sazon goya con azafran seasoning
- 2 - cubes - maggi cons-mate tomato and chicken flavor seasoning
- 1 cup water
- to taste salt and pepper
- FOR THE RICE
- 2 1/2 cups white rice (rinsed thoroughly)
- 1 - 7 3/4 ounces can of el pato jalapeno salsa (can sub with reg tomato sauce)
- 1 cup water
- TO SERVE
- 1 can rico's queso blanco (or your favorite queso)
- sliced fresh jalapeno
- chopped cilantro
- chopped onion
- warm floour tortillas
How To Make arroz con pollo (chicken and rice) my way

Step 1To cooker, add chicken, 1 cup water, Sazon season packets, salt and pepper.

Step 2Secure lid and set cooker to "Chicken" setting (20 min.) Allow pressure to relase naturally.

Step 3Remove chicken from cooker and set aside, keep warm.

Step 4To remaining stock, add the Cons-mate cubes, 1 can of El Pato Jalapeno sauce, Rice and 1 cup water. Stir thoroughly until Cons-mate cubes have dissolved.

Step 5Secure lid on cooker and set to "Rice". When finished do quick release on pressure. **Note: When this is done rice will not be dry and fluffy. Should still be a little wet.

Step 6Tear chicken into small pieces or shreds and add to rice. Combine thoroughly.

Step 7Heat Queso according to directions.

Step 8Serve Arroz con Pollo with Queso drizzled over top. Serve with warm flour tortillas and add desired toppings and enjoy. I prefer Jalapeno, Cilantro, and diced onion but the choices are up to you.

Step 9Note: You should be able to find all ingredients at a Mexican Grocer or most Super Markets in the International foods. I was able to purchase all ingredients from Wal-mart. "El Pato", "Sazon", and "Maggi Cons-mate" are all common brand names.
