I am half Puerto Rican and half Colombian, I have mixed both of my cultures to make an exquisite dish called Rice and Chicken. It is wonderful if you cook a Puerto Rican kidney been stew over it as well for change.

Ingredients
- 2 tablespoons olive oil
- 1/2 medium onion, vidalia, peeled
- 1/2 medium green pepper
- 3/4 bunch cilantro, fresh
- 2 teaspoons sofrito
- 1/2 teaspoon minced garlic
- 1/2 can tomatoe sauce
- 1 tablespoon adobo powder
- 2 packages sazon seasoning packs
- 1 can corn
- 2 cups rice
- 4 cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 large chicken breast halves, skinless and boneless
How To Make arroz con pollo

Step 1Pour over 2 table spoons of olive oil into a medium pot over medium high heat, put 1/2 diced onion, 1/2 diced green peeper, 1 tbsp. of adobo, 2 packages of sazon seasoning packs, 1/2 tsp. on minced garlic, 1/2 small can of tomatoe sauce and seer until you can smell the vegetables cooking.

Step 2Cut chicken breast into small cubes and add to vegetables to seer.

Step 3Once vegetables and chicken are well seared, you add 2 cups of rice and 4 cups of water, add 1 tsp. salt or to taste 1 tsp. black pepper to taste.

Step 4Stirring it very well, bring to a boil for 2 to 3 minutes then cover for 27 minutes, open stir and cover let sit for about 5 minutes, then serve.
