Ingredients
- 1 large roasting chicken
- 3 medium potatoes (any kind you have on hand)
- 2 large sweet potatoes
- 3 small apples(any kind)
- 4 large carrots
- 1 large white onion
- 10 - garlic cloves
- 3/4 cup apricot jam or preserves
- 1 cup honey bbq sauce
- 1 can dark soda(coke,pepsi,dr.pepper)
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons soy sauce
How To Make apricot glazed sunday chicken

Step 1Cut onion in half and slice fairly thick. Peel garlic cloves. Put the onion and garlic in the middle of a large roasting pan(no foil).

Step 2Cut potatoes in half lenghtwise and place near edge of pan. Peel sweet potatoes and cut in half and place in pan. Make sure all potatoes are cut side down.

Step 3Cut carrots into 2 inch chunks and place in pan wedged in next to potatoes. Core apples and cut into quarters. Place on top of veggies in pan.

Step 4Spread the onion and garlic out a bit and try to get some in with the veggies. Wash and dry the chicken and place in middle of pan.

Step 5Add a few dashes of soy sauce on the veggies. Pour half the can of soda over the chicken. Salt and pepper to taste.

Step 6Place in 425 degree oven for 45 mins to and hour-be sure to check so veggies don't burn.

Step 7Mix remaining soda, bbq sauce and jam in bowl. Pour over chicken and vegetables. Reduce heat to 350 degrees and bake 1 hour more.
