HEB was giving free a 1 liter bottle of Manzanita Apple Soda with 2# or more of butt pork. I had to figure out a way to use, since I knew we would not drink it. This is what I came up with; it tastes pretty good.

Ingredients
- 4 - boneless skinless chicken breasts
- - salt & pepper to taste
- 2 tablespoons olive oil
- BASTING SAUCE
- 2 cups manzanita apple soda or apple juice
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chinese five spice powder
- 1 teaspoon hoison chili sauce

Step 1Preheat oven to 350º Line a sided baking sheet with parchment paper Place cooking rack on baking sheet over parchment paper Set aside

Step 2PREPARE BASTING SAUCE: Place apple soda, soy sauce, honey, lemon, 1 tablespoon olive oil, chili sauce and spices together. Whisk until it is well blended and forms a smooth sauce. Set aside

Step 3Heat 2 tablespoons olive oil in cast iron or heavy skillet over medium high heat. Place chicken in skillet and cook 3 minutes per side until slightly brown. Remove from heat

Step 4With basting mop or brush generously rub chicken with basting sauce and place each piece on cooking rack on baking sheet Place small oven safe bowl of water under cooking rack to keep smoke down Place baking sheet in preheated oven and cook for 30 minutes, basting often. Turn chicken over after 15 minutes Check internal temp of chicken with thermometer, it it is not at 165º at the thickest part, cook for 5 minute increments until that temp is reached. If you don't have a meat thermometer, pierce with fork at thickest part. If juices run clear, it is done.
