In 1989 I was a single working Mom with 3 children, there were times when desperation became the mother of invention. This is one of those recipes when I took stock of the cupboard and came up with this somewhat strange combination. Amazingly enough it became a recipe that would be repeated by request for many years to come.

    diced celery
  • 1/4 c
    diced onion
  • 4
    medium size chicken breast, split in half
  • 1/2 c
    evaporated milk
  • 1 1/2 c
    fine crushed cheese cracker crumbs
  • 1/2 tsp
  • 1/2 tsp

How to Make Apple Chicken Bake


  1. Preheat oven to 350°.
  2. Mix cracker crumbs with paprike and 1/2 teaspoon salt; set aside.
  3. Blend applesauce with allspice, 1 teaspoon salt, flour, and Ketchup; stir in celery and onion. Pour mixture in 13x9x2-inch baking dish.
  4. Dip chicken in evaporated milk and roll in crumb mixture.
  5. Arrange on top of chicken of applesauce mixture.
  6. Bake for about 45 minutes or until chicken is done.
