Ingredients
- 4 tablespoons butter
- 1/2 cup flour
- 2 teaspoons coriander
- 5 cups chicken broth
- 1 cup onion, chopped
- 1/2 cup green peppers, chopped
- 3 cups monterey jack cheese
- 2 cups sour cream
- - flour tortillas
- 4 cups cubed chicken
- 8 ounces green chiles
How To Make anniversary chicken enchilada

Step 1Mix and cook until thick and bubbly: In order: 2 Tablespoons butter flour coriander chicken broth

Step 2In another pan saute: onions and green peppers in 2 Tablespoons Butter. Add 8 oz Green Chilies (small can) 4 cups cubed chicken.

Step 3Combine sauce and saute mix

Step 4Mix together Monterey Jack Cheese and Sour Cream. Divide in half, adding the first half to the sauce/saute mixture. Reserve other half.

Step 5Place mixture into individual tortilla shells, roll and place in greased baking dish. Pour remaining cheese and sour cream mixture over tortillas.

Step 6Bake at 350 until bubbly and top is browned, about 1 hour.
