This is my version of stuffing and chicken casserole. I throw recipes together all the time and don't really measure. This is loved by all who taste it :)

Ingredients
- 2 cups chopped cooked chicken (i used 3/4 of a large can of chunked chicken; drained)
- 1 cup chicken broth, low-fat
- 1 can cheddar cheese soup; undiluted
- 2 cups stuffing mix, chicken
- 1/4 cup diced onion (i use frozen)
- 1 cup frozen veggies of your choice
- 1 cup shredded cheddar or swiss
- 1/4 cup parmesan cheese

Step 1Chop chicken, or drain the can if using canned chunk chicken. SAVE 1 CUP OF THE BROTH

Step 2Preheat oven to 350

Step 3Add all ingredients together except the cheeses; mix well. Put in a 13X9 in. pan and cover with tin- foil

Step 4Bake for about 30 mins. Remove foil and top with the cheeses. Bake uncovered for about 10 mins. or until bubbly and golden.
