Angel Hair Pasta and Chicken

This a great colorful pasta and chicken dish served with garlic bread and a tossed salad.

2 Tbsp
olive oil, extra virgin
boneless, skinless chicken breasts
1 large
carrot sliced 1/4 inch cut diagonally
3 clove
minced garlic
grape tomatoes cut in half
1 c
sliced water chestnuts {optional}
12 oz
angel hair pasta
2/3 c
chicken broth, condensed
1 oz
10 ounce frozen broccoli florets, thawed
1 Tbsp
fresh chopped basil
1 c
grated fresh parmesan cheese


1Cut chicken into 1 to 1 1/2 inch pieces..heat 1 tbsp oil in skillet add chicken and cook or 15 minutes til light golden remove from skillet and drain on paper towel.
2Heat remaining oil in pan add carrots stirring for 5 minutes,,meanwhile heat water in large pot and cook pasta according to package directions..add broccoli, garlic, basil and chestnuts, cook stirring for 4 minutes add chicken broth to skillet return chicken to skillet reduce heat to low and cook for 5 minutes.add tomatoes and cook just til heated about 2minutes.
3Drain pasta place in a large serving bowl top with chicken and other ingredients..sprinkle with parmesan cheese to serve.
