Ingredients
- 4 bone in chicken thighs
- salt and pepper
- 4 ounces butter, softened
- 10 anchovy filets, chopped
- 3 cloves garlic, minced
- 4 sprigs thyme
- 1 sprig rosemary
- crusty bread, cut into cubes
- parsley, for garnish
How To Make anchovy chicken with chicken fat croutons

Step 1Heat oven 450 degrees F. Dry the chicken and season with salt and pepper. Mix the butter with the anchovies and garlic. Place the chicken skin side up in a baking dish and spread the butter mixture over each piece of chicken.

Step 2Place in oven for 30 minutes or until juices run clear turning once. Remove the chicken to a plate and remove the sprigs of thyme and rosemary.

Step 3Place the bread cubes in the fat in the pan and carefully stir to coat them. Reduce the oven to 350 and back about 15 minutes until browned and crunchy. Garnish the chicken with parsley and croutons. Or serve the croutons with a salad.
