Almond Chicken Casserole

5 cchicken breast, halves, boneless and skinless, diced

1/2 cmayonnaise

1/2 cyogurt, plain

1 can(s)cream of mushroom soup

2 cchicken broth

3/4 Tbspwhite pepper

1 Tbspsalt

2 Tbsplemon juice

3 Tbspchopped onion

8 ozsliced water chestnuts , drained

4 ccooked rice
-
1 cchopped celery

2/3 cbutter
-
1 1/2 calmonds, slivered

3 ccorn flake cereal, crushed
How to Make Almond Chicken Casserole
- Mix the chicken, mayonnaise, yogurt, soup, broth, pepper, salt, lemon juice, onion, rice, water chestnuts, 1 cup almonds and celery together.
- Put into a large buttered casserole dish.
- Mix 1/2 cup almonds, the butter, and the corn flakes together and top the casserole with this mixture.
- Bake in a pre-heated 350 degree oven for 35-45 minutes.
- NOTE: This dish refrigerates well and freezes well so it can be made ahead and stored.
