my family really enjoys this casserole and its so easy to make.

Ingredients

  • 5 cups chicken breast, halves, boneless and skinless, diced
  • 1/2 cup mayonnaise
  • 1/2 cup yogurt, plain
  • 1 can cream of mushroom soup
  • 2 cups chicken broth
  • 3/4 tablespoon white pepper
  • 1 tablespoon salt
  • 2 tablespoons lemon juice
  • 3 tablespoons chopped onion
  • 8 ounces sliced water chestnuts , drained
  • 4 cups cooked rice
  • 1 cup chopped celery
  • 2/3 cup butter
  • 1 1/2 cups almonds, slivered
  • 3 cups corn flake cereal, crushed

How To Make almond chicken casserole

  • Step 1
    Mix the chicken, mayonnaise, yogurt, soup, broth, pepper, salt, lemon juice, onion, rice, water chestnuts, 1 cup almonds and celery together.
  • Step 2
    Put into a large buttered casserole dish.
  • Step 3
    Mix 1/2 cup almonds, the butter, and the corn flakes together and top the casserole with this mixture.
  • Step 4
    Bake in a pre-heated 350 degree oven for 35-45 minutes.
  • Step 5
    NOTE: This dish refrigerates well and freezes well so it can be made ahead and stored.
