    chicken breast, halves, boneless and skinless, diced
  • 1/2 c
    mayonnaise
  • 1/2 c
    yogurt, plain
  • 1 can(s)
    cream of mushroom soup
  • 2 c
    chicken broth
  • 3/4 Tbsp
    white pepper
  • 1 Tbsp
    salt
  • 2 Tbsp
    lemon juice
  • 3 Tbsp
    chopped onion
  • 8 oz
    sliced water chestnuts , drained
  • 4 c
    cooked rice
  • 1 c
    chopped celery
  • 2/3 c
    butter
  • 1 1/2 c
    almonds, slivered
  • 3 c
    corn flake cereal, crushed

How to Make Almond Chicken Casserole

Step-by-Step

  1. Mix the chicken, mayonnaise, yogurt, soup, broth, pepper, salt, lemon juice, onion, rice, water chestnuts, 1 cup almonds and celery together.
  2. Put into a large buttered casserole dish.
  3. Mix 1/2 cup almonds, the butter, and the corn flakes together and top the casserole with this mixture.
  4. Bake in a pre-heated 350 degree oven for 35-45 minutes.
  5. NOTE: This dish refrigerates well and freezes well so it can be made ahead and stored.
