- 6 tablespoons olive oil
- 1 cup orzo
- 1 pound skinless, boneless chicken thighs or breasts, cut into 1.5" chunks
- 3 cloves garlic, finely chopped
- 1 large onion, sliced
- 2 cups water
- 1 tablespoon tomato paste
- 2 - bay leaves
- 1 1/4 teaspoons salt
- 1/8 teaspoon freshly ground pepper

Step 1Heat 2 Tbsp olive oil in a pressure cooker over medium high heat. Add orzo and sauté 4-5 minutes, stirring frequently, until orzo begins to turn light brown. Spoon into a small bowl and set aside.

Step 2Heating remaining olive oil in pressure cooker over high heat. Add chicken, garlic, and onion and saute, stirring frequently, 6-8 minutes, or until chicken begins brown. Add remaining ingredients except browned orzo. Stir well.

Step 3Position the lid and lock in place. Bring to high pressure. Adjust heat to stabilize pressure and cook 6 minutes. Remove from the heat and lower pressure cooker under cold running water. Open cooker; season to taste.

Step 4Stir in the orzo. Position the lid and lock in place. Bring to high pressure. Adjust heat to stabilize pressure and cook 4 minutes. Remove from the heat and lower pressure by placing the pressure cooker under cold running water. Open the cooker. If the orzo is not tender, simmer, uncovered 2-3 minutes.
