Ingredients

chicken
1 lb
pork
1 medium
onion, chopped
4 clove
garlic, crushed or minced
1 c
soy sauce
1 c
white vinegar
1 c
water
1
bay leaf
1 tsp
paprika
salt and pepper to taste
sliced white potatoes
cooked white rice

How to Make Adobo shared with me from M.Ocampo

Step-by-Step

  • 1Lightly brown garlic and onion until transparent. Add pork and cook until partially done. Add chicken and brown for a few minutes. Salt and pepper to taste (but be careful with salt as soy has quite a bit of sodium in it). Add paprika and bay leaf. Pour soy sauce, vinegar and water into mixture. Stir. Slow cook for 3 hours or more to make a hearty stew. 30-45 minutes before serving add sliced potatoes. The potatoes will turn brown, absorbing the juice. I like to thicken using a flour and water paste so it is a thick stew. Serve over white rice. Yum!!! You will make this again and again. Worth the divorce!
