Ingredients
- 1 tablespoon oil
- 4 bone in chicken thighs
- 1 large onion chopped
- 3 cloves garlic minced
- 3 tablespoons each soy sauce and water
- 2 tablespoons white vinegar
- 4 tablespoons honey
- 1 bay leaf
- salt and pepper to taste
- 3 cups cooked long grain rice
- cilantro minced for garnish
How To Make adobo chicken

Step 1Place a large skillet over medium high heat. Add the oil and get it hot. Season the chicken with salt and pepper. Add to the oil skin side down. Cook until the skin is golden brown. Turn and cook until browned on the other side. about 5 minutes per side. Remove chicken to a plate and set aside.

Step 2Add the onions and garli to the pan. Cook until the onions are translucent. Return the chicken to the pan skin side up.

Step 3Add the soy sauce, water, vinegar, honey and bay leaf. Bring to a boil. Reduce heat and cover and cook 12 minutes. Remove lid and cook another 20 minutes until the sauce has thickened and the chicken is no longer pink.

Step 4Serve over rice and garnish wtih cilantro
