A Different Kind of CHINESE Sweet n' Sour Chicken

The unusual ingredient of mixed sweet pickles intrigued me to try this recipe although I was a bit leary of what the outcome would be. It MAKES the recipe delicious! My family loved it!
Note: I have never used the last two optional ingredients listed.

Ingredients

1 1/2 lbchicken, boneless, cut into bite-size pieces (white or dark or both)

1egg, beaten

·salt and pepper, to taste

1 cwater

1 tspsalad oil

1 cflour
-
·oil for frying

4 slicepineapple, canned, cut into wedges

2bell pepppers (any color(s)), cut into strips

1 cmixed sweet pickles

·water (to cover)

1 cketshup
-
1 csugar
-
1/4 cwater chestnuts (optional)

1/4 cbaby corn (optional)
How to Make A Different Kind of CHINESE Sweet n' Sour Chicken
- MAKE BATTER:
Add to the beaten egg: salt, water, oil. Add flour and blend until smooth. - MAKE CHICKEN:
Heat oil (or other shortening). Dip chicken pieces into batter. Fry until well browned. - While chicken is frying, place pepper strips, pineapple and pickles in a pot with water to just cover. Boil only 5 minutes. Turn heat to low. (At this point, the relish pieces may be removed with a sieve, only if desired, but as this is done, mash their juices back into the pot. Add the other ingredients. Heat and add chicken. Stir gently and serve with your choice of rice.
