This recipe was found accidentally. It started out as a pizza topping. Didn't want to take time to make the dough so I thought I'd just make the topping. Turned out fantastic, in my opinion. Very easy, very fast, and very tasty

Ingredients

  • 1/2 lb
    chicken tenders cut in half
  • 1-2 Tbsp
    olive oil
  • 1/2
    red onion (sliced into quarters then thinly sliced)
  • 1/4 c
    prepared pesto (i got mine in costco)
  • 2 large
    plum tomatoes
  • 1/2 c
    shredded mozzarella cheese

How to Make 7 minute Chicken Dish

Step-by-Step

  1. Place the olive oil in a large frying pan and heat over medium heat. Add chicken, cook and stir for 2 minutes. Add onion and pesto; cook and stir for about 4 minutes or until chicken is cooked through. Stir in tomatoes and cheese. Let cool slightly before serving.
