whiskey peppercorn mushroom casserole

This new mushroom casserole I created is inspired by Kinder's Whiskey Peppercorn seasoning. It is filled with three kinds of mushrooms (shiitake, white buttons, and cremini), seasoned rigatoni, and there's crumbled blue cheese and honey ham on the bottom.

Ingredients

  • 1 1/4 cups crumbled blue cheese
  • 8 slices deli-style honey ham, sliced
  • 8 tablespoons whiskey peppercorn seasoning, divided
  • 16 ounces uncooked rigatoni
  • 1 tablespoon olive oil
  • 3 shiitake mushrooms, sliced
  • 6 white button mushrooms, sliced
  • 3 cremini mushrooms, sliced
  • 3/4 cup steak sauce mixed with brown sugar
  • 2 tablespoons honey mustard
  • 1 tablespoon margarine
  • 1 cup heavy cream
  • 1/2 cup 2% milk
  • 1 packet dry onion soup mix
  • 4 teaspoons ground black pepper
  • 8 ounces light cream cheese
  • 1 cup shredded pizza cheese blend

How To Make whiskey peppercorn mushroom casserole

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Coat the sides and bottom of a 2-quart rectangular baking dish with cooking spray. Add crumbled blue cheese, sliced honey ham strips, and 2 tablespoons of whiskey peppercorn seasoning; mix well.
  • Step 3
    Cook rigatoni according to package directions; drain. Transfer to a large bowl. Add 2 tablespoons whiskey peppercorn seasoning; toss well for 30 seconds until mixed.
  • Step 4
    Heat the olive oil in a large skillet over medium-high heat. Add sliced mushrooms and saute for 5 minutes or until the mushrooms are fragrant. Season with 2 tablespoons of whiskey peppercorn seasoning.

    Reduce to low heat. Stir in steak sauce/brown sugar and honey mustard. Remove from heat.
  • Step 6
    Melt margarine in a medium saucepan over medium heat. Combine heavy cream,2% milk, dry onion soup mix, ground black pepper, cream cheese, and remaining whiskey peppercorn seasoning.

    Stir together and let it simmer for 8 minutes until it thickens.

    Add seasoned rigatoni and sauteed mushrooms; mix well until combined. Remove from heat.
  • Step 9
    Pour into a prepared baking dish and spread evenly. Sprinkle with pizza cheese blend.
  • Step 10
    Bake for 30 minutes or until the cheese is melted. Cool completely for 15 more minutes.
