Ingredients
- 3/4 cup uncooked macaroni
- 1 cup brocoli - cut into small pieces (fresh)
- 1/2 cup cauliflower - cut into small pieces (fresh)
- 4 small carrots - cut in slices
- 1/2 tablespoon butter
- 1/4 cup onion - chopped
- 1/8 cup flour
- 1/2 cup milk
- 1/2 cup chicken stock
- 1/2 cup shredded cheese of choice
How To Make veggie macaroni and cheese casserole

Step 1Lightly spray baking dish with Pam. Preheat oven at 350.

Step 2In saucepan, cook macaroni. Add broccoli, cauliflower and carrots during last six minutes of cooking. Drain.

Step 3Transfer ingredients to baking dish.

Step 4In large saucepan, heat butter over medium heat. Saute onion until tender. Stir in flour until blended. Gradually stir in milk and broth; bring to boil. Cook & Stir until thickened.

Step 5Stir in cheese. Add to macaroni mixture, stirring to coat.

Step 6Bake uncovered about 15 minutes.
