Ingredients

  • 3/4 cup uncooked macaroni
  • 1 cup brocoli - cut into small pieces (fresh)
  • 1/2 cup cauliflower - cut into small pieces (fresh)
  • 4 small carrots - cut in slices
  • 1/2 tablespoon butter
  • 1/4 cup onion - chopped
  • 1/8 cup flour
  • 1/2 cup milk
  • 1/2 cup chicken stock
  • 1/2 cup shredded cheese of choice

How To Make veggie macaroni and cheese casserole

  • Step 1
    Lightly spray baking dish with Pam. Preheat oven at 350.
  • Step 2
    In saucepan, cook macaroni. Add broccoli, cauliflower and carrots during last six minutes of cooking. Drain.
  • Step 3
    Transfer ingredients to baking dish.
  • Step 4
    In large saucepan, heat butter over medium heat. Saute onion until tender. Stir in flour until blended. Gradually stir in milk and broth; bring to boil. Cook & Stir until thickened.
  • Step 5
    Stir in cheese. Add to macaroni mixture, stirring to coat.
  • Step 6
    Bake uncovered about 15 minutes.
