This was a Weight Watchers recipe I was given while on the program in Scotland. A lady had altered her family recipe to be diet conscious. This is so darn good, you can't tell it is diet!

Ingredients For turkey shepherd's pie

  • 1 1/2 lb
    potatoes, pared and cut into 1/8" pieces
  • 2 tsp
    oil
  • 2 c
    chopped onion
  • 2 c
    chopped sweet green pepper
  • 1 c
    finely chopped carrots
  • 2 tsp
    salt
  • 1 clove
    garlic, finely chopped
  • 1/2 tsp
    pepper
  • 1/2 tsp
    basil
  • 1/2 tsp
    oregano
  • 2 Tbsp
    flour
  • 1/2 lb
    ground turkey
  • 2
    eggs
  • 1 c
    beef broth from bouillon cube
  • 3 Tbsp
    tomato paste
  • 1/4 c
    skim milk

How To Make turkey shepherd's pie

    Cook potatoes till tender, keep warm. Saute onion, green pepper and carrot in oil 8 min. Stir in basil, oregano, 1 t salt and pepper--add water if necessary to prevent sticking.

    Brown turkey, drain off fat. Blend in flour, add tomato and broth to vegetables. Stir well, then add turkey, and cook till mixture thickens. Spread into an ungreased 8" pan. Mash potatoes, add remaining salt, skim milk, and eggs. Spoon over meat filling, make potato reach sides of pan.

    Bake at 375 degrees 45-50 min or until top is puffed and golden.
