turkey shepherd's pie
This was a Weight Watchers recipe I was given while on the program in Scotland. A lady had altered her family recipe to be diet conscious. This is so darn good, you can't tell it is diet!

Ingredients
- 1 1/2 pounds potatoes, pared and cut into 1/8" pieces
- 2 teaspoons oil
- 2 cups chopped onion
- 2 cups chopped sweet green pepper
- 1 cup finely chopped carrots
- 2 teaspoons salt
- 1 clove garlic, finely chopped
- 1/2 teaspoon pepper
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 2 tablespoons flour
- 1/2 pound ground turkey
- 2 - eggs
- 1 cup beef broth from bouillon cube
- 3 tablespoons tomato paste
- 1/4 cup skim milk
How To Make turkey shepherd's pie

Step 1Cook potatoes till tender, keep warm. Saute onion, green pepper and carrot in oil 8 min. Stir in basil, oregano, 1 t salt and pepper--add water if necessary to prevent sticking.

Step 2Brown turkey, drain off fat. Blend in flour, add tomato and broth to vegetables. Stir well, then add turkey, and cook till mixture thickens. Spread into an ungreased 8" pan. Mash potatoes, add remaining salt, skim milk, and eggs. Spoon over meat filling, make potato reach sides of pan.

Step 3Bake at 375 degrees 45-50 min or until top is puffed and golden.
