turkey sausage casserole

My husband worked with a guy that gave him a Sausage Casserole recipe about 25 yrs ago (or so). We loved it. Through the years, I made a few changes and this is my last version. We love it anyway you make it! You may substitute your favorite sausage and creamed soup, whatever and make it yours. Enjoy! Thanks Charlene and Eugene!

Ingredients

  • 1 pound turkey breakfast sausage
  • 1/2 cup onion, chopped
  • 1 can cream of celery soup
  • 6 ounces wide egg noodles (about 1/2 bag)
  • 1/8 teaspoon red pepper flakes (optional)
  • 1/8 teaspoon dried sage, (optional)
  • 3/4 cup dry bread crumbs
  • 1/2 stick butter or margarine

How To Make turkey sausage casserole

  • Step 1
    Preheat oven to 350 degrees F. While oven is preheating, cook egg noodles according to package directions.
  • Step 2
    Spray large skillet with cooking spray. Add sausage and onion. Break up sausage while lightly browning. You may add the red pepper flakes and sage if desired at this stage. When sausage is no longer pink and onions are slightly translucent, remove from heat.
  • Step 3
    Add the can of cream of celery soup (or cream of mushroom or chicken, your choice) and the cooked drained egg noodles. Stir. Add to 2.5 qt oval baking dish.
  • Step 4
    Melt butter/margarine and stir into dry bread crumbs. Sprinkle over the top of casserole.
  • Step 5
    Bake at 350 degrees F for approximately 30 to 40 minutes or until lightly golden brown and bubbly.
  • Step 6
    Serve with your favorite cornbread recipe, sliced tomatoes and green onions if desired! A complete meal. Enjoy!
