tuesday tamale pie
This is another of my go-to recipes to cook ahead for my lunchbox. It reheats wonderfully and can be frozen.

Ingredients
- CRUST
- water
- 1 to 2 cups masa
- FILLING
- 1 pound ground beef
- 1 package taco seasoning mix
- 1 can red enchilada sauce
- LAYERS
- 1 can niblet corn, drained
- 1 can black beans, drained
- 1 - 2 cups shredded cheeses*
- TOPPING
- 1 can queso
- crushed tortilla chips

Step 1Use the directions on the bag for water to masa ratio. You want enough paste for a thin crust patted into a greased 13x9 casserole. I add a pinch or two of salt to the mix, too.

Step 2Brown ground beef. Add seasonings per taco mix packet reducing the water by half. Stir in on can of enchilada sauce. Remove from heat.

Step 3Sprinkle shredded cheese on top of crust. I use both cheddar and cotija but you can use a Mexican blend if you prefer. There's no wrong cheese!

Step 4Pour on beans and corn.

Step 5Layer meat on top of beans and corn.

Step 6Top by pouring the queso over the meat layer (yes... this is really cheesy!) Go as hot as you and your family likes. You can even add a jalapeno layer if you want.

Step 7Top off with a generous amount of crushed tortilla chips.

Step 8Bake at 350° for 30 minutes or until browned and bubbling.
