teriyaki chicken baked penne with swiss

I created this new baked penne recipe. It's inspired by Kinder's Teriyaki seasoning. It is filled with teriyaki chicken, portobello mushrooms, a new creamy teriyaki sauce, and Swiss cheese.

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons margarine, divided
  • 5 skinless boneless chicken breasts, cut into 1/2 strips
  • 6 tablespoons teriyaki seasoning, divided
  • 3 fresh portobello mushrooms, sliced
  • 4 teaspoons ground ginger
  • 1 cup teriyaki sauce, divided
  • 1/2 cup Dijon mustard
  • 2 tablespoons dark brown sugar
  • 1 pound dry penne pasta
  • 1 cup heavy cream
  • 3/4 cup half and half
  • 1 tablespoon onion powder
  • 8 ounces cream cheese, softened
  • 1 cup shredded Swiss cheese

How To Make teriyaki chicken baked penne with swiss

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat the bottom and sides of a 13- x 9-inch baking dish with cooking spray.
  • Step 3
    Heat olive oil and 1 tablespoon margarine in a large, deep skillet over medium heat. Add fresh chicken strips and season with 2 tablespoons of teriyaki seasoning.
  • Step 4
    Cook and saute for 5 minutes or until the chicken is no longer pink. Stir in sliced portobello mushrooms, ground ginger, 1/2 cup teriyaki sauce, Dijon mustard, and dark brown sugar. Remove from heat.

    Cook penne pasta according to package directions; drain. Transfer to a large bowl. Season with 2 tablespoons of teriyaki seasoning; mix well for 3 minutes.

    Melt remaining margarine in a medium saucepan over medium heat. Combine heavy cream, remaining teriyaki sauce, half and half, onion powder, cream cheese, and remaining teriyaki seasoning; stir well and let it simmer for 5 minutes or until thickened.

    Add the teriyaki chicken mixture and cooked penne pasta; mix well for 2 minutes until combined. Remove from heat.
  • Step 8
    Pour into a greased baking dish and spread evenly. Sprinkle with shredded Swiss cheese.

    Bake for 30 minutes or until golden brown. Let stand for 15 minutes before serving.
