I don't know where this came from, but it was cut out and on the desk in NC in Dec 2024 as something Baba thought sounded good...lol.

Ingredients
- 1/4 cup oil, divided
- 1 pound ground pork (I would use hamburger)
- 6 scallions, white and green parts, separate and slice thin (i would use purple or vidalia)
- 2 tablespoons chili powder
- 1 tablespoon fresh oregano minced, or 1 tsp dried
- 1 teaspoon salt, divided (I only use pink sea salt)
- 15 ounces can black beans, rinsed
- 14 1/2 ounces can diced tomatoes
- 1 cup frozen corn (use can, hubby prefers, drain really well)
- 1/2 cup chicken broth, unsalted
- 1 cup cheddar cheese, shredded (said pepper jack but I don't like it)
- 3/4 cup flour
- 3/4 cup cornmeal
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup buttermilk
- 1 large egg
How To Make tamale pie

Step 1Oven to 400 degrees F. Cook meat, break up, until beginning to brown. Stir in onion, chili powder, oregano, and 1/4 tsp salt.

Step 2Stir in beans, tomatoes and juice, corn, and broth. Simmer; cook 7 minutes. Take from the heat and add cheese. Season with salt and pepper to taste.

Step 3Mix together flour, cornmeal, remaining salt, and some onion. Whisk buttermilk, egg, remaining 3 T oil until smooth (okay, use a mix... lol, maybe 2). Stir into flour mix until just combined (now mix for freaking certain, lol).

Step 4Pour batter over meat, smooth into an even layer (said in cast iron, I will use 9x13, spray with PAM). Bake until the topping is golden. Toothpick test. Takes 15-20 min. Rotate 9x13 halfway through. Let rest 10 minutes before serving.
