How To Make tamale pie

  • 1
Oven to 400 degrees F. Cook meat, break up, until beginning to brown. Stir in onion, chili powder, oregano, and 1/4 tsp salt.
  • 2
Stir in beans, tomatoes and juice, corn, and broth. Simmer; cook 7 minutes. Take from the heat and add cheese. Season with salt and pepper to taste.
  • 3
Mix together flour, cornmeal, remaining salt, and some onion. Whisk buttermilk, egg, remaining 3 T oil until smooth (okay, use a mix... lol, maybe 2). Stir into flour mix until just combined (now mix for freaking certain, lol).
  • 4
Pour batter over meat, smooth into an even layer (said in cast iron, I will use 9x13, spray with PAM). Bake until the topping is golden. Toothpick test. Takes 15-20 min. Rotate 9x13 halfway through. Let rest 10 minutes before serving.
